Cooking with AllHome: Pinoy Barbecue

Like most Filipino dishes, every Filipino parent and household has their own versions of this classic dish. Filipino Pork Barbecue is a dish composed of marinated pork slices that are skewered and grilled to perfection. It is normally grilled over wood charcoal and dipped in a tall jar of spicy vinegar before eating.

 

Unlike its western versions, Filipino Pork Barbecue is so well-ingrained in our DNA that it is usually seen in the streets everyday. People can easily get them at the side of the road for their merienda or dinner. While on beach trips and family outings, it is one of the staple pre-packed meals our parents prepare. It can also be grilled in most beach and pool resorts as they already have fire pits and grills ready for their guests. 

 

It’s  the perfect dish to serve for everyone. Aside from pancit bihon and lumpiang shanghai, the pork barbecue dish is almost always a part of a festive spread in parties. Birthdays, holidays, fiestas, and other special occasions would not be complete without this beloved classic. 

 

It’s also so easy to make, as almost all households in the Philippines own their own set of griller!

Pinoy Barbecue Ingredients:

 

Set A: Meat

3 lbs pork shoulder sliced into thin pieces

 

Set B: Marinade

3 tablespoons Knorr Liquid Seasoning

4 pieces calamansi or 2 pieces lime

½ cup UFC Tamis Anghang Banana ketchup

½ cup Datu Puti soy sauce

¼ cup Mama Sita’s oyster sauce

1 cup Sprite

2 ½ tablespoons brown sugar

1 cup garlic, peeled and minced

 

Set C: Basting Sauce

5 tablespoons Datu Puti soy sauce

1 tablespoon Knorr Liquid Seasoning

1 piece calamansi or ½ lime

¼ cup UFC Tamis Anghang Banana ketchup
⅛ cup oyster sauce

2 teaspoons vegetable oil

 

Set D: Spiced Vinegar Dip

1 cup Datu Puti vinegar

3 cloves garlic, peeled and minced

½ red onion, peeled and finely chopped

3 Thai chili peppers, chopped

⅛ teaspoon freshly ground pepper

¼ teaspoon salt 

 

Other:

16 (12-inch) Bamboo Skewers

 

Instructions:

 

Marinating

  1. Cut the pork shoulder into cubes about one inch in size all around. Add the pork slices in a bowl or in an air-tight container larger than the amount of meat inside, leaving room for the marinade.
  2.  In a large mixing bowl, combine all the marinade ingredients: banana ketchup, soy sauce, calamansi juice, oyster sauce, Sprite,  brown sugar, ground pepper, and garlic. Mix all the contents, make sure everything is well-blended and the brown sugar has dissolved.
  3. Pour the marinade over the meat and mix together to make sure all the meat is covered. For great depth of flavor, marinate the meat for at least 4 hours or overnight for best results.

 

Grilling 

  1. Soak the bamboo skewers in water for at least 30 minutes. Remove the marinade from the fridge and let sit on the counter for 30 minutes to adjust the temperature before grilling.
  2. In a small bowl, combine the banana ketchup, oyster sauce, and vegetable oil. Mix them thoroughly.
  3. Assemble the BBQ skewers by adding about five-six pieces of pork to each skewer. Try to alternate fattier and leaner pieces. Repeat until all pieces of meat are skewered.
  4. Preheat the grill to medium-high heat. Place the skewers on the grill and cook for four minutes on one side before turning. Repeat cooking for another four minutes.
  5. Use a food-safe brush to baste the glaze on one side of the skewer and grill for one minute. Baste again before turning over the skewer, then grill for another minute. Repeat basting and grilling until it’s cooked. (Adjust cooking time if necessary or remove the skewers if they’re finished.)
  6. Continue until all barbecue has been grilled.
  7. Serve with rice and a side of Atchara, or sweet Filipino pickled papaya.

 

For the Spiced Vinegar Dip

  1. In a smaller bowl, mix together the ingredients for spiced vinegar dip: white vinegar, garlic, red onion, Thai chili peppers, ground pepper, and salt.
